Shrimp Tacos with Grapefruit Avocado Salsa & Roasted Jalapenos

minutesAnother taco recipe.. yes please! We combined crunchy crisp shrimp with refreshing, tart grapefruit and creamy avocado and a little bit of jalapeno to create a delicious meal for any day of the week!
Ingredients
- For the Cilantro- Lime Crema Sauce
1/2 cup sour cream or greek yogurt
2 Tbsp. of lime juice
1 clove of garlic
1/2 tsp. of chipotle paste
1/4 cup of loosely packed cilantro
1/2 tsp. of salt and freshly ground pepper
- For the Grapefruit Avocado Salsa
1 grapefruit, peeled, sectioned and chopped
1 avocado, diced
1/4 cup of red onion, diced
1/2 cup of poblano pepper, diced
1/4 cup of cilantro, chopped
1/2 tsp. of kosher salt
- For the Tacos
1 lb. of uncooked shrimp, peeled and deveined and tails removed
1 tsp. of chipotle chili powder
1/2 tsp. of ground cumin
1 tsp. of smoked paprika
1/2 tsp. of salt
2 Tbsp. of olive oil, divided
1 jalapeno, cut into slices
1 cup of cotija cheese, crumbled
1 cup of red cabbage, shredded *
Directions
- For the Cilantro-Lime Crema Sauce
- Place all ingredients in a small food processor and pulse for a few seconds until combined.
- Set aside.
- For the Grapefruit Avocado Salsa
- Place all ingredients in a medium size bowl. Gently stir to combine.
- Set aside.
- For the Tacos
- In a large bowl, whisk together chipotle chili powder, cumin, smoked paprika, salt.
- Heat olive oil in a non-stick skillet over medium heat. Add shrimp and cook until opaque about 3-4 minutes (Flip halfway through cooking.)
- Preheat boiler. Place jalapenos on foil lined cookie sheet. Toss jalapenos with 1 tsp. of olive oil and broil for 5 minutes or until blackened.
- To assemble tacos, layer with sauce, cabbage, shrimp, salsa, cotija cheese and jalapeno slices.
Tips and Nutritional Value
- 1. * To heat tortillas, we charred ours directly over the gas flames for 1-2 minutes per tortillas. You can also wrap a stack of tortillas in foil and put them in the oven for approximately 10 minutes on low heat to soften.
