Salmon Cakes with Caper Sauce

What else can you make with salmon?! This is perfect for leftover salmon, but it is also worth the extra couple of minutes to pre-cook the fresh salmon if you don’t have leftovers. Plus we top them with a delicious lemon caper sauce.

Ingredients

  • For Salmon Cakes
  • 1 lb. of fresh salmon

  • 2 Tbsp. of olive oil, divided

  • 1 stalk of celery, finely diced

  • 1/2 sweet onion, finely diced

  • 1/4 cup of panko bread crumbs

  • 1 tsp. of dijon mustard

  • 1/4 cup of mayonnaise

  • 2 cloves of garlic, minced

  • 1 tsp. of old bay seasoning

  • 1 Tbsp. of fresh dill, minced

  • Salt and pepper to taste

  • For the Caper Sauce
  • 1/4 cup of mayonnaise

  • 1/4 cup of sour cream

  • 1 tsp. of dijon mustard

  • 1 tsp. of fresh dill, minced

  • 1 tsp. of hot sauce

  • Juice of 1/2 a lemon

  • 1/4 cup of capers

Directions

  • For the Salmon Cakes
  • Preheat oven to 350 degrees. Roast salmon for 15 minutes. Allow to cool and then coarsely flake.
  • In a medium skillet, add 1 Tbsp. of olive oil and cook celery and onion until soft, about 5-6 minutes. Remove from heat and cool to room temperature.
  • In a large bowl, add flaked salmon, celery, onions, bread crumbs, dijon, mayo, garlic, dill. salt and pepper. Gently combine all ingredients and form into four 1- inch patties.
  • In a large skillet, heat 1 Tbsp. of olive oil. Add patties and cook for about 3-4 minutes on each side or until cooked through and golden brown.
  • For the Sauce
  • Combine all the ingredients and stir to combine,
  • Chill for about 30 minutes to allow the flavors to blend.
