These single serving quiches are perfect for Easter brunch. We added crab meat to make them extra yummy, but whatever you have in your refrigerator will work too. You can also use muffin pans to bake the quiche.

Ingredients

  • 4 large eggs

  • 1 cup of half and half

  • 1/2 tsp. of kosher salt

  • 1/4 tsp. fresh ground pepper

  • 1/2 tsp. of old bay seasoning

  • 2 Tbsp. of fresh dill, chopped

  • 1/2 cup of green onions, thinly sliced

  • 1 cup of shredded gruyere cheese, divided

  • 2 Tbsp. of parmesan cheese

  • 1/2 lb. of lump crab meat

  • 6 baking cups

  • Cooking spray

Directions

  • Preheat oven to 375 degrees. Lightly spray baking cups.
  • In medium size bowl, whisk the eggs and half and half. Add salt, pepper and old bay seasoning.
  • Evenly spread crab meat, gruyere cheese, green onions, and dill into the baking cups.
  • Evenly pour the egg mixture into the cups. Top with parmesan cheese.
  • Place cups on a baking sheet. Bake for 30 minutes or until the edges are set, but the center still jiggles a bit.
  • Remove from oven and let it rest for about 20 minutes.

tips

  • 1. Can be made a day ahead and reheated in 300 degrees oven for 15-20 minutes.
  • 2. These individual quiches also freeze and reheat perfectly. Just reheat in 350 degree oven for about 20-30 minutes.
