Roast Beef and Caramelized Onion Sliders with Red Wine Sauce

Game day or any day… these soft rolls layered with tender roast beef, caramelized onions, cheddar cheese with bacon and topped with everything but the bagel seasoning are always a winner and crowd pleaser.

Ingredients

  • Sliders
  • 1 package of 12 Hawaiian rolls (we used Trader Joes)

  • * 3/4 lb. of roast beef, thinly sliced

  • ** 2 cups of shredded cheddar cheese (we used Trader Joe’s Bacon Cheddar cheese)

  • 1 Tbsp. of butter

  • 1 Tbsp. of avocado oil

  • 2 large yellow onions, thinly sliced

  • 1 tsp. of kosher salt

  • 2 Tbsp. of fresh thyme leaves

  • 2 Tbsp. of mayonnaise

  • 1-2 Tbsp. of Everything but the bagel seasoning

  • Sauce
  • 2 Tbsp. of butter

  • 2 Tbsp. of flour

  • 1 cup of beef broth

  • 1/4 cup of red wine

  • 1 Tbsp. of worcestershire sauce

  • 1 tsp. of dijon mustard

Directions

  • Sliders
  • In a medium size heavy bottom skillet, add avocado oil and melt butter. Add onions, salt and fresh thyme leaves. On low heat, continue to cook for about an hour or until they become golden and giving off a nutty aroma. If the onions start to burn, stir in a splash of water and stir the onions. Set aside.
  • Preheat oven to 350 degrees. Slice the package of rolls in half. Spread mayonnaise on the inside of the top and bottom. Place the bottom half in a 9×13 rimmed baking dish.
  • Place the roast beef on the bottom half by layering and folding as needed to pile nice and high. Next, layer the cheese and top with caramelized onions. Cover with top half of rolls.
  • Brush top of the rolls with sauce and sprinkle Everything but the Bagel Seasoning.
  • Slice into individual sliders and serve with sauce to dip into.
  • Sauce
  • Melt butter in a small saucepan. Add flour and whisk together until blended and slightly brown in color.
  • Add broth, wine, worcestershire sauce and mustard. Whisk to combine, bring to a boil and cook for about 5-7 minutes or until slightly thickened.

  • 1. * We used thin slices of a roasted rump, but you can also use deli meat.
  • 2. ** Any brand of cheddar cheese will work.
