Roasted Cauliflower and Pomegranate Salad with Avocado Tahini Dressing

This healthy salad is a delicious combination of textures and flavors. We enjoy the creaminess of the vegetables and the fun tart crunch of the seasonal pomegranates. This salad is hearty enough to be served as a main dish.

Ingredients

  • For the Salad
  • 1 large head of cauliflower, cut into florets

  • 3 Tbsp. of olive oil

  • 2 Tbsp. of Trader Joe’s Elote seasoning *

  • Kosher salt and black pepper to taste

  • 6 cups of mixed greens

  • 2 Persian cucumbers, sliced

  • 1/2 cup of chickpeas, we used Trader Joe’s Chickpeas with Cumin and parsley

  • 1/2 cup of pomegranate arils

  • 1/2 cup of walnuts, toasted

  • 1/4 cup of freshly chopped parsley

  • 4 ounces of crumbled blue cheese

  • For the Dressing
  • 1/2 avocado

  • 1/2 juice of 1 lemon

  • 1 Tbsp. of honey

  • 2 Tbsp. of tahini

  • 1 Tbsp. of dijon mustard

  • 1/4 cup of extra virgin olive oil

  • 1 Tbsp. of white wine vinegar

  • 1/2 tsp. of kosher salt

  • 2 Tbsp. of water (more if too thick)

Directions

  • For the Salad
  • Preheat oven to 425 degrees.
  • On a large rimmed baking sheet, add cauliflower, olive oil, Elote seasoning, salt and pepper. Toss well to evenly coat and roast in oven for 30-40 minutes or until tender and lightly browned.
  • On a large platter, layer with mixed greens, roasted cauliflower, cucumbers, chickpeas, pomegranate arils and walnuts. Toss with blue cheese and parsley.
  • Serve with dressing.
  • For the Dressing
  • Combine all ingredients in a small food processor. Blend until smooth. Add water to thin it out if necessary.

Tips & Nutritional Value

  • 1. * Elote seasoning can be substituted with a combination of 1 Tbsp. of chili powder, 1 Tbsp. of smoked paprika, 1 tsp. of minced garlic, 1 tsp. of cumin.
