Pears with Prosciutto and Blue Cheese

Just a couple of ingredients create a sweet and savory fall or holiday appetizer that will be sure to impress your guests. We drizzled them with cranberry/pear balsamic vinegar for an extra touch of flavor.

Ingredients

  • 4 seckel pears, sliced into 6 wedges each

  • 1 tsp. of lemon juice

  • 4 ounces of blue cheese, cut into small pieces

  • 12 pieces of thinly sliced prosciutto, cut in half lengthwise

  • 1 Tbsp. of cranberry/pear balsamic vinegar (we used the brand Olive Oil Etcetera)*

  • Fresh ground pepper

  • 24 small skewers or tooth picks

Directions

  • In a large bowl, toss the pears with lemon juice to prevent them from browning.
  • Microwave the blue cheese pieces for about 15-30 seconds. This softens the blue cheese which keeps it from crumbling when skewered.
  • To assemble, wrap prosciutto around the pear, top with piece of blue cheese and add skewer/toothpick to keep it together.
  • Drizzle with vinegar and top with fresh ground pepper.

  • 1. * White balsamic vinegar will work also.
