Cobb Salad with Healthy Smokey Ranch Dressing

A classic Cobb salad is a protein-packed salad that can be a meal in itself. It’s full of flavor and color and it is the perfect salad to serve a crowd. Our creamy smokey ranch dressing makes it even more delicious.

Ingredients

  • Salad
  • 8 cups of shredded romaine, chopped

  • 5 ounce bag of butter lettuce

  • 2 cups of sliced cherry tomatoes

  • 2 cups of ripe avocados cut into 1/2 inch pieces

  • 6 hard-boiled eggs, cut in quarters

  • 2 cups of kalamata olives, pitted

  • 2 cups of mini seedless cucumbers, sliced & halved

  • 2 cups of crispy bacon, broken into bite size pieces

  • 2 cups of cheese (we used Colby Jack)*

  • 2 Tbsp. of chopped fresh chives

  • Kosher salt and ground pepper to taste

  • Dressing
  • 1 cup of plain greek yogurt

  • 1/3 cup of buttermilk

  • 1 clove of fresh garlic, minced

  • 1/2 tsp. of onion powder (we used Trader Joe’s Onion Salt)

  • 1 tsp. of smoked paprika (we used Trader Joe’s)

  • Juice of half a lime

  • 1 Tbsp. of fresh dill, finely chopped

  • 1 tsp. of kosher salt

  • 1/2 tsp of fresh ground pepper

Directions

  • Salad
  • In a large serving platter, add mix of lettuce.
  • Arrange tomatoes, avocados, eggs, olives, cucumbers, bacon and cheese on top of lettuce.
  • Top with chives, salt and pepper.
  • Serve with dressing.
  • Dressing
  • In a medium bowl, whisk all ingredients together.
  • Store in a jar or bowl with a lid in the fridge for up to 2 weeks.

  • 1. Add shredded cooked chicken or salmon to make the dish even heartier.
  • 2. *Substitute blue cheese or feta cheese.
  • 3. Eggs are not only a good source of protein and many necessary vitamins and minerals, but they contain a nutrient called choline.
  • 4. Avocados are high in heart healthy monounsaturated fatty acids. Studies have proven that eating avocados can improve heart disease and cholesterol .
