Cherry & Peach Bruschetta with Hot Honey

We are obsessed with the combination of summer cherries and peaches. The combined colors become a piece of art and with a touch of goat cheese, prosciutto and hot honey, the flavor is amazing. A perfect appetizer for summer entertaining.

Ingredients

  • 1 baguette, cut into 1 inch diagonal slices

  • 4 Tbsp. of olive oil

  • 5 ounces of goat cheese ( we used Trader Joe’s chèvre with honey)

  • 3-4 slices of prosciutto, cut into 1 inch strips

  • 1 cup of chopped cherries (we use Rainer and Dark Sweet Cherries)

  • 1-2 peaches, chopped into small pieces

  • 2 Tbsp. of fresh thyme

  • 2-3 Tbsp. of hot honey (we use mike’s hot honey)

  • Kosher salt and fresh ground pepper

Directions

  • Preheat oven to 350 degrees.
  • Brush olive oil on each baguette slice. Bake in oven for approximately 10 minutes or until crispy and golden brown.
  • Spread goat cheese on top of each slice.
  • Place a slice of prosciutto on the middle of each slice. (try to keep the prosciutto flat).
  • Add chopped cherries, peaches and thyme to each slice. Drizzle hot honey and sprinkle salt and pepper.
