Peach, Tomato and Burrata Summer Salad

Is there anything better than sweet summer peaches and heirloom tomatoes? This simple and delicious salad celebrates the fresh flavors of summer. We drizzle it with a spicy honey vinaigrette for extra flavor.

Ingredients

  • Salad
  • 5 ounce bag of argula

  • 2 large peaches, cut into pieces

  • 2 large heirloom tomatoes, cut into pieces

  • 6 ounce of burrata cheese, broken into pieces*

  • 3 Tbsp. of fresh mint, chopped

  • Salt and fresh cracked pepper

  • Vinaigrette
  • 2 Tbsp. of hot honey (we use Mike’s hot honey)**

  • 2 Tbsp. of white balsamic vinegar

  • 1 Tbsp. of dijon mustard

  • 1 tsp. of water

  • Pinch of kosher salt

Directions

  • Salad
  • Simply place arugula on a serving platter and layer remaining ingredients. Drizzle with vinaigrette.
  • Vinaigrette
  • Combine all ingredients and mix well.

Tips

  • 1. *Burrata Cheese is very soft and will not slice easily. Just add the creamy chunks to the salad. Burrata cheese can be substituted with fresh mozzarella.
  • 2. **Plain honey can be substituted for hot honey if you or your guest do not enjoy spicy flavors.
