Healthier Spinach Artichoke Dip

minutesEveryone loves this classic appetizer and your guests will never know you didn’t use mayo. Serve the dip with your favorite vegetables and crackers to create a colorful and healthy dish.
Ingredients
1 Tbsp. of olive oil
2 cloves of fresh garlic, minced
2 cups of plain non-fat greek yogurt
4 ounces of reduced fat cream cheese, room temperature
8 ounces of artichoke hearts, drained and chopped
5 ounces of fresh spinach (approximately half a bag)
1/2 cup of grated parmesan cheese
1/4 cup of queso or feta cheese, crumbled
3-4 dashes of hot sauce
1 Tbsp. of fresh lemon juice
1 Tbsp. of fresh dill, chopped
1/2 tsp. of kosher salt and pepper to taste
Directions
- Preheat oven to 350 degrees.
- Heat olive oil in a skillet on medium heat. Add garlic and saute for about 1 minute, stirring constantly. Then add spinach and continue to cook for about 1-2 minutes or until wilted. Set aside.
- Mix remaining ingredients in a medium size bowl. Add cooked spinach. Transfer to a 1 quart baking dish.
- Bake for 20-25 minutes or until the top is toasty.
- Serve with bread, veggies, chips or crackers.
Tips
- 1. Hollow out a round loaf of bread, leaving a thick shell to use as the bowl for the dip. Cut or tear the bread from the inside of the loaf to use for the dip if desired.
