Healthier Spinach Artichoke Dip

Everyone loves this classic appetizer and your guests will never know you didn’t use mayo. Serve the dip with your favorite vegetables and crackers to create a colorful and healthy dish.

Ingredients

  • 1 Tbsp. of olive oil

  • 2 cloves of fresh garlic, minced

  • 2 cups of plain non-fat greek yogurt

  • 4 ounces of reduced fat cream cheese, room temperature

  • 8 ounces of artichoke hearts, drained and chopped

  • 5 ounces of fresh spinach (approximately half a bag)

  • 1/2 cup of grated parmesan cheese

  • 1/4 cup of queso or feta cheese, crumbled

  • 3-4 dashes of hot sauce

  • 1 Tbsp. of fresh lemon juice

  • 1 Tbsp. of fresh dill, chopped

  • 1/2 tsp. of kosher salt and pepper to taste

Directions

  • Preheat oven to 350 degrees.
  • Heat olive oil in a skillet on medium heat. Add garlic and saute for about 1 minute, stirring constantly. Then add spinach and continue to cook for about 1-2 minutes or until wilted. Set aside.
  • Mix remaining ingredients in a medium size bowl. Add cooked spinach. Transfer to a 1 quart baking dish.
  • Bake for 20-25 minutes or until the top is toasty.
  • Serve with bread, veggies, chips or crackers.

Tips

  • 1. Hollow out a round loaf of bread, leaving a thick shell to use as the bowl for the dip. Cut or tear the bread from the inside of the loaf to use for the dip if desired.
