Even though this is a breakfast item we sometimes enjoy eggs for dinner! Folded eggs are a combination of scramble eggs and an omelet. This simple technique results in layers of fluffy and creamy eggs that will become one of your favorite “quick-to-go” meals.

Ingredients

  • 2 large eggs

  • 1 Tbsp. of water

  • 1 Tbsp. (heaping) of creme fraiche

  • 2 Tbsp. of shaved parmesan cheese (we use Trader Joes shaved parmigiano reggiano

  • 1 slice of whole grain bread, toasted

  • 1/2 fresh avocado, mashed

  • Drizzle of black truffle extra virgin olive oil

  • 1/4 tsp. of red chili pepper

  • Kosher salt and freshly ground pepper to taste

Directions

  • Add mashed avocado to toasted bread. Sprinkle with salt and pepper, set aside.
  • Whisk eggs, water and creme fraiche until combined.
  • Spray medium size nonstick pan with cooking spray. Heat pan and pour egg mixture into the pan.
  • Let mixture sit for 15-20 seconds or until the eggs begin to set around the edges. Using a spatula, stir and push the eggs constantly while tilting the pan to allow the runny center to move to the perimeter until the eggs are set, about 2 minutes.
  • Add cheese and salt then fold eggs over to form half circle shape and fold in half again. Cover the eggs with a lid for about 1 minute to help cheese melt.
  • Place eggs on top of avocado toast. Drizzle with truffle oil and sprinkle with red pepper, ground pepper and additional salt if needed.
