Asparagus, Edamame & Mango Spring Salad

minutesOf course we had to make a pretty spring time version of our signature salad! Add of course we included Trader Joe’s goat cheese. For this salad we used chevre goat cheese with honey.. perfect combination with fresh spring vegetables!
Ingredients
- Salad
10 ounces mixed greens
1 bunch of fresh asparagus, cut into 2 inch pieces
1/2 english cucumber, diced
1 cup of shelled edamame
3-4 radishes, thinly sliced
1 mango, diced
1/2 cup of baked chickpeas (we use Saffron Road brand, falafel flavor)
8 ounces of crumbled goat cheese (we use Trader Joe’s goat cheese with honey)
1 Tbsp. of olive oil
1 Tbsp of kosher salt
Fresh pepper to taste
- Citrus Dressing
3 Tbsp. of fresh orange juice (about 1-2 oranges)
2 Tbsp. of fresh lemon juice (about 1 lemon)
1 Tbsp. of orange zest
1 Tbsp. of dijon mustard
2 tsp. of honey
1 clove of garlic , minced
1 tsp. of fresh thyme
1 small shallot, finely chopped
1/2 tsp. kosher salt
Fresh ground pepper
1/2 cup of olive oil
Directions
- Pre heat oven to 400 degrees.
- Toss asparagus with olive oil and roast for 10 minutes.
- Add greens to bottom of serving platter and them layer remaining ingredients on top of greens in a circular pattern.
- Drizzle salad lightly with dressing. Serve remaining dressing on the side.
- Citrus Dressing
- In a small bowl, whisk together orange juice, orange zest, lemon juice, mustard, honey, garlic, thyme, shallot, salt and pepper.
- Slowly whisk in olive oil until blended.

- 1. Asparagus is best in the spring and packed with many essential vitamins and minerals especially vitamin K and folate. Vitamin K is a nutrient the body needs for healthy bones and also plays a role in blood clotting. Folate is critical for pregnant women and normal fetal growth.
