Mediterranean Salmon Grain Bowl

In our opinion, grain bowls are worth repeating! We combined some of our favorites and made a Mediterranean version with salmon and citrus dressing overflowing with fresh herbs.

Ingredients

  • Citrus Dressing
  • 3 Tbsp. of fresh orange juice (about 1-2 oranges)

  • 2 Tbsp. of fresh lemon juice (about 1 lemon)

  • 1 Tbsp. of orange zest

  • 1 Tbsp. of dijon mustard

  • 2 tsp. of honey

  • 1 clove of garlic , minced

  • 1 tsp. of fresh thyme

  • 1 small shallot, finely chopped

  • 1/2 tsp. kosher salt

  • Fresh ground pepper

  • 1/2 cup of olive oil

  • Salmon Grain Bowl
  • 4 pieces of fresh salmon fillets

  • 2 Tbsp. of olive oil

  • Two 7 ounce bag of Full Green Cauliflower Rice, cook according to directions*

  • 6 ounces of fresh chopped lettuce (we used kale and Caesar)

  • 4 ounces of chopped feta cheese

  • 1/2 cup of hummus, divided (2 Tbsp. per bowl)**

  • 1/2 english cucumber, divided

  • 1/2 red onion, diced

  • 2 Tbsp. of fresh dill, chopped

  • 2 Tbsp. of fresh mint, chopped

  • Roasted Brussel sprouts or any veggie (optional)

Directions

  • Citrus Dressing
  • In a small bowl, whisk together orange juice, orange zest, lemon juice, mustard, honey, garlic, thyme, shallot, salt and pepper.
  • Slowly whisk in olive oil until blended.

  • Salmon Grain Bowl
  • In a small dish, gently toss the salmon with 1/2 of the dressing. Cover and let sit for 30 minutes at room temperature.
  • In a medium nonstick skillet, heat 2 Tbsp. of olive oil. Add salmon and cook without moving, about 4 minutes. Carefully flip the fillets and continue cooking an additional 4-5 minutes.
  • In a small bowl, combine cucumber, onion, dill. Toss and set aside.

Notes

  • 1. * Substitute cauliflower rice with brown rice or any desired grain!
  • 2.**Use store bought hummus or see our blog on Roasted Garlic Hummus
  • You can add another roasted veggie to this bowl if desired! We added roasted Brussel sprouts!
