Roasted Garlic Hummus

minutesThis homemade hummus recipe is simple, healthy, creamy and dreamy! There are so many flavorful variations and different ways to use it. We made a new batch every week!
Ingredients
1 medium head of garlic
One 15 ounce can of chickpeas, rinsed and drained
1/4 cup of tahini (we use Trader Joe’s organic tahini)
Juice of 2 lemons
1/4 tsp. of smoked paprika
2-4 Tbsp. of cold water, more as needed
2 Tbsp. of extra-virgin olive oil, plus more for drizzle
1/2 tsp. of cumin
1 tsp. of kosher salt
Directions
- Preheat oven to 400 degrees. Cut the stem ends off of the head of garlic to expose the top of the garlic cloves. Drizzle with olive oil. Wrap in foil and roast for 20-30 minutes. Remove garlic from the papery skins and set aside.
- Add chickpeas to a saucepan and cover with an inch of water. Simmer for 20 minutes. Drain and set aside.*
- In a food processor, add garlic, tahini, lemon juice, paprika, cumin, water, olive oil and salt. Puree until smooth.
- Add the chickpeas. Puree for additional 3-4 minutes or until hummus is smooth. If it seems thick add more water (1 Tbsp. at a time) until desired consistency.
- Drizzle with additional olive oil on top.
