Here is an “egg-cellent” idea for all of the hard boiled eggs we have leftover after Easter. We added avocado and traderJoe’s elote seasoning but there are so many different variations of deviled eggs.. be creative! We also think deviled eggs are great anytime of the year!

Ingredients

  • 12 hard boiled eggs *

  • 1 avocado, pitted

  • 1 Tbsp. of red onion, finely chopped

  • 1/2 jalapeno, finely chopped

  • 2 cloves of garlic , minced

  • 3 Tbsp. of plain yogurt

  • Juice of 1 fresh lime

  • 1 tsp. of trader joe’s Elote seasoning, plus additional for dusting on top**

  • 1 tsp. of salt

  • 1 Tbsp. pf cilantro, finely chopped

Directions

  • Cut each egg in half lengthwise.
  • Remove yolks from each egg and place them inside a large bowl.
  • Add avocado and mash together with the egg yolks, add onion, jalapeno, garlic, yogurt, elote seasoning, lime juice and salt. Stir to combine
  • Add egg mixture to a zip-lock freezer bag. Cut off one corner of the bag and pipe into egg whites. Top with cilantro and elote seasoning.

  • 2. ** Cumin can be substituted for elote seasoning.
  • We recommend drizzling lemon juice on top of the deviled eggs to keep them from browning.
