Ingredients
12 hard boiled eggs *
1 avocado, pitted
1 Tbsp. of red onion, finely chopped
1/2 jalapeno, finely chopped
2 cloves of garlic , minced
3 Tbsp. of plain yogurt
Juice of 1 fresh lime
1 tsp. of trader joe’s Elote seasoning, plus additional for dusting on top**
1 tsp. of salt
1 Tbsp. pf cilantro, finely chopped
Directions
- Cut each egg in half lengthwise.
- Remove yolks from each egg and place them inside a large bowl.
- Add avocado and mash together with the egg yolks, add onion, jalapeno, garlic, yogurt, elote seasoning, lime juice and salt. Stir to combine
- Add egg mixture to a zip-lock freezer bag. Cut off one corner of the bag and pipe into egg whites. Top with cilantro and elote seasoning.
Tips, nutritional value
- 1.* See our blog “Naturally Dyed Easter Eggs” for directions on how to prepare hard boiled eggs.
- 2. ** Cumin can be substituted for elote seasoning.
- We recommend drizzling lemon juice on top of the deviled eggs to keep them from browning.
- Eggs are the perfect food! They are protein-packed and contain a little bit of almost every nutrients you need. (Source: Healthline)
