Naturally Dyed Easter Eggs

Beautiful colors without chemical dye! It does require more preparation and waiting time but you probably have most of the kitchen materials and the results are worth the extra effort!

Ingredients

  • 1 dozen of white eggs, hard boiled

  • 2 cups of brewed strong coffee

  • 4 large yellow onions

  • 1/2 medium red cabbage, chopped

  • 3 red beets, cooked

  • 3 Tbsp. of turmeric

  • 2 cups of blueberry juice (we use Trader Joe’s)

  • 7 Tbsp. of white vinegar, divided

Directions

  • To hard boil eggs, add eggs and cold water to a large pot, making sure the water covers the eggs by at least two inches.
  • Bring to a boil, uncovered about 15 minutes.
  • Turn off the heat, keep the pan on the hot burner, cover and let sit for 10-12 minutes.
  • Prepare a large bowl of ice water. Carefully remove eggs from pot and add to ice water. Allow eggs to cool about ten minutes.
  • For orange, yellow and light pink eggs*
  • Combine 6 cups of water and 3 tbsp. of vinegar in a medium pot.
  • Bring to a boil and simmer for 15 minutes. Allow. to cool.
  • For orange eggs (worked really well)*
  • Add skins of 4 large yellow onions to a medium size bowl. Pour 2 cups of the prepared water/vinegar mixture on top of the skins. Add eggs and leave them to sit overnight in the fridge.
  • Yellow eggs(worked really well)*
  • Add 3 Tbsp. of ground turmeric to medium size bowl. Pour 2 cups of the prepared water/vinegar mixture into bowl mix well with turmeric. Add eggs and leave them to sit overnight in the fridge.
  • Light pink eggs(a little weak)*
  • Crush cook beets in a medium size bowl. Pour 2 cups of the water/vinegar mixture into bowl. Add eggs and leave them to sit overnight in the fridge.
  • Blue eggs(worked really well)*
  • Add chopped cabbage to large pot and cover with water. Bring to a boil and simmer for about 20 minutes. Allow to cool about 30 minutes. Remove cabbage from water. Add 2 tbsp. of vinegar. Add eggs and leave them to sit overnight in the fridge.
  • Purple eggs( a little weak)*
  • Bring two cups. of blueberry juice and 1 tbsp. of vinegar to medium pot. Bring to a boil and simmer for 15 minutes. Allow to cool. Pour into medium size bowl and add eggs leave them to sit overnight in the fridge.
  • Brown eggs(worked really well)*
  • Bring 2 cups of strong brewed coffee and 1 tbsp. of vinegar to medium pot. Bring to a boil and simmer for 15 minutes. Allow to cool. Pour into medium size bowl and add eggs. Leave eggs to sit for approximately 2 hours.

Tips

  • *1. Eggs can be removed at any time to achieve desired color.
