Pork Rice Bowl with Grapefruit and Avocado

With grapefruit at its peak season (plus we love the sweet tart flavor) and our abundance of pulled pork after slow cooking a 12 lb. pork roast … we added a couple more healthy ingredients and created a quick and delicious rice bowl.
Ingredients
2 cups of pulled pork ( see our citrus jalapeno pulled pork blog)
2 cups of cooked brown rice
6 ounces of salsa verde (we use Trader Joe’s)
One 15- ounce can of black beans, drained and rinsed
6 ounces of fresh chopped lettuce (we used romaine and kale)
12 ounces of pico de gallo (we use Trader Joe’s)
2 avocados, sliced
1 cup of queso fresco, crumbled
1 pink grapefruit, segmented
1/2 cup of fresh cilantro, chopped
Directions
- If using leftover pulled pork, reheat in skillet on medium-high heat until the meat is warm and starts to caramelize.
- Combine rice and salsa verde, mix well.
- Layer four bowls with lettuce. Divide the remaining ingredients among the bowls and serve immediately.
