Citrus Jalapeño Pulled Pork

This pulled pork recipe is definitely a winner! The meat is slow cooked with dry spices, jalapeños and orange juice. It is not only easy , delicious and super tender but results in a large amount of meat and can be used in a variety of ways.

Ingredients

  • 12 lbs. bone-in pork shoulder roast (also called pork butt)

  • 1 cup of orange juice

  • 1 onion, quartered

  • 2 jalapeños, sliced

  • 2 cloves of fresh garlic

  • For the dry rub
  • 1/4 cup of brown sugar

  • 3 Tbsp. of chili powder

  • 1 Tbsp. of smoked paprika

  • 2 tsp. of freshly ground pepper

  • 2 tsp. of garlic powder

Directions

  • Preheat oven to 325 degrees.
  • Combine all dry rub ingredients in a small bowl and mix well. Massage dry rub on all sides of the meat. Place the pork butt on a roasting rack inside a roasting pan with fat side up.
  • Add orange juice, onion, jalapeños and garlic.
  • Cover loosely with foil and roast in the oven for approximately 4-5 hours or until fork tender.* Cooked temperature should be 200 degrees. (The meat should easily fall apart with little pressure).
  • Transfer the pork to a large bowl. When cool enough to handle, use two forks to shred the meat into small pieces. Remove any large pieces of fat or bones.
  • Reserve and strain the juices. Add some of the reserved juices back into pork. If you have time, refrigerate for a few hours or overnight to de-fat the liquid. The fat will separate and rise to the top. Simply scrape this layer off and discard.

Tips

  • 1. * Some cuts can take longer-you will know when it’ s done based on when you are able to pull the park about without much effort.
  • 1. This budget-friendly cut of meat is a great choice for a large crowd. Plus, there are so many meal options to make with it. Besides the traditional pork bbq sandwich, you can use pulled pork for tacos, sliders, pasta and even pizza!
