Need a dinner idea??  These healthy and creamy vegetarian tacos are filled with flavor that your whole family will enjoy.

Ingredients

  • 1 large head of cauliflower, cut into bite size pieces

  • 3 Tbsp. of avocado oil

  • 1 avocado, sliced

  • 1 1/2 cups of prepared slaw mix ( we use Trader Joe’s)

  • 1 cup of chipotle cream sauce * (see recipe below)

  • Eight  6 inch corn tortillas

  • 1 cup of queso fresco, crumbled

  • 1/2 cup of fresh cilantro, chopped

  • 2 Tbsp. of kosher salt

  • Fresh ground pepper

  • Chipotle Lime Crema
  • 8 ounces of sour cream or plain yogurt

  • Juice from 1 fresh lime

  • 1 clove of fresh garlic, minced

  • 1 Tbsp. of chipotle sauce (we used Wegman’s Ancho Chipotle Pepper Adobo Chile Paste)

  • 1/4 tsp. of salt

Directions

  • Preheat oven to 425 degrees.
  • Place cut pieces of cauliflower on a large baking sheet. Toss with oil, salt and pepper. Roast for approximately 35-40 minutes or until golden and crispy.
  • Heat tortillas. We charred ours directly over the gas flames for 1-2 minutes per tortilla. You can also wrap a stack of tortillas in a packet of aluminum foil and put in the oven for approximately 10 minutes (low heat) to soften.
  • Combine all chipotle lime cream ingredients in a bowl.
  • To assemble tacos, fill each tortillas with slaw, add cauliflower, avocado and cheese. Top with cream sauce and cilantro.
