Smoky Chicken Salad with Grapes and Avocado

We had leftover chicken from our Chicken Sheet Pan recipe so we added some sweet grapes and smoky paprika and turned it into another flavorful meal. We love leftovers!

Ingredients

  • 2 cups of cooked chicken, chopped*

  • 1/2 cup of red grapes, sliced in half

  • 1/2 cup of celery, chopped

  • 1/2 avocado, diced

  • 2 Tbsp. of mayonnaise

  • 2 Tbsp. of sour cream

  • 1/2 tsp. of Smoked Spanish Paprika

  • 1 Tbsp. of fresh tarragon, chopped

  • 1/2 tsp. of kosher salt

  • Fresh ground pepper to taste

Directions

  • In a large mixing bowl, add chicken, grapes , celery, and avocado.
  • In a separate smaller bowl, whisk together mayonnaise, sour cream, paprika, tarragon, salt and pepper. Add to mixture to large bowl. Gently stir to combine.

  • 2. Red grapes contain vitamins C and K. They also contain the antioxidant resveratrol. Studies have shown resveratrol protects heart disease and may benefit brain health. Red grapes are also a great source of hydration because they are made up of 80 percent water.
