Roasted Broccoli with Lemon Oil and Crushed Chili Peppers

We all love and need an easy side dish recipe! This is a familiar technique to preparing broccoli, we just added a little twist!

Ingredients

  • (2) 12 ounce bags of frozen broccoli florets

  • 3 Tbsp. of Lemon Extra Virgin Olive Oil* (We use Wegmans brand)

  • 1/2-1 tsp. of crushed red chili peppers

  • 1 tsp. of kosher salt

  • Freshly ground pepper

  • 1/4 cup of fresh grated parmesan cheese

Directions

  • Preheat oven to 400 degrees. Place a baking sheet in the oven while it’s heating up.  (Since the broccoli is frozen, this helps the broccoli roast instead of steam from the liquid).
  • Combine broccoli, lemon oil, red chili peppers, salt and pepper in a large bowl. Toss to coat. Carefully remove the hot baking sheet from the oven and add broccoli, spreading evenly on the sheet. Roast until tender and the broccoli is beginning to brown on the edges, approximately 30 minutes. (toss broccoli halfway through)
  • Remove tray from oven. Sprinkle with parmesan cheese.
  • Switch oven to broil setting. Return to oven and broil for 1-2 minutes or until cheese melts.

  • 1. * You can use regular olive oil if you can’t find lemon flavored.
  • 2. Broccoli contains high amounts of  vitamin K-promotes bone health and helps reduce arthritis. It’s low in calories and has high levels of vitamin C!
