Happy healthy New Year! Let’s start 2020 with a wintery twist on our signature salad using another Trader Joe’s flavored goat cheese.

Ingredients

  • Salad
  • 5 cups of mixed greens

  • 1 red pear, diced

  • 2 green apples (1 sliced, 1 diced)

  • 3/4 cup of fresh pomegranate seeds

  • 3/4 cup of diced cranberries

  • 1/2 cup of pistachio nuts (optional)

  • 8 ounces of crumbled goat cheese ( we used Trader Joe’s Cranberry Goat Cheese Log)

  • Dressing
  • 1/4 cup of extra virgin olive oil

  • 3 Tbsp. of pomegranate juice

  • 3 Tbsp. of champagne vinegar

  • 1 tsp. of dijon mustard

  • Kosher salt and fresh ground pepper to taste

Directions

  • Add greens to bottom of a round serving platter. Evenly distribute remaining ingredients on top of greens. Finish with sliced apples as shown in picture.
  • Combine the dressing ingredients in a small jar. Close the lid tightly and shake well to combine.
  • Lightly drizzle the salad with dressing. Serve remaining dressing on the side.

  • Pomegranates are another delicious superfood that you should add to your diet. They can be intimidating at first but once you break through the tough skin you will find sweet-tart seeds inside that are packed with antioxidants and nutrients. We recommend cutting them open in water. Pre-seeded pomegranates work just as well, however we recommend buying the whole pomegranate because it is fresher!
  • Studies have shown that pomegranates help reduce inflammation and lower blood pressure. Trust us… it’s worth the effort! We love to add the seeds to a glass of prosecco too!
