Brussels Sprouts and Apple Salad with Pumpkin Seeds

minutesIt’s time to start thinking about the Thanksgiving Day menu! While we love the classic Thanksgiving dishes, this recipe is a twist on a side dish that is healthy and delicious, and will definitely impress your guests.
Ingredients
1 lb. of fresh brussels sprouts, trimmed and halved
6 Tbsp. of extra virgin olive oil, divided
1 medium apple, cut into thin matchsticks with skin on
1/2 small red onion, sliced thinly
1/4 cup of cheddar cheese, cut into thin matchsticks (we used Trader Joe’s Unexpected Cheddar Cheese)
1 Jalapeño, seeded and chopped
2 tsp. of honey
Juice of 1 lemon, plus 1 tsp. of lemon zest
6 ounce bag of butter lettuce (or any greens you prefer)
1/2 cup of roasted pumpkin seeds (we used Trader Joe’s Pumpkin Spiced Pumpkin Seeds)
Directions
- Preheat oven to 400 degrees. Place brussels sprouts on large baking sheet, drizzle with 3 Tbsp. of olive oil, salt and pepper. Toss until combined.
- Roast until brussels sprouts are tender and crispy on the outside, about 30 minutes. Toss halfway through cooking.
- In a small food processor, add Jalapeño, honey, lemon juice, lemon zest and remaining 3 Tbsp. of olive oil and blend until smooth.
- Combine lettuce, brussels sprouts, apples, red onion, cheese and pumpkin seeds. Toss with Jalapeño dressing.

- 1. Brussels sprouts are nutritional superstars!! They are rich in an antioxidant called kaempferol, which may reduce cancer growth, decrease inflammation and promote heart health. They are also high in fiber, Vitamin C and Vitamin K.
