Lobster Chowder

minutesTypically, lobster chowder reminds us of a summer recipe using fresh New England lobster tail. But thanks to Trader Joe’s frozen Langostino tails, this recipe is the perfect way to beat the cold temperatures. Our version is a little lighter in calories than most recipes which makes it even more comforting to eat!
Ingredients
One 12 ounce bag of trader Joe’s frozen Langostino tails
5 Tbsp. of butterOne 1/2 cups of onions, diced
One 1/2 cups of carrots, diced
One 1/2 cups of celery, diced
2 cloves of fresh garlic, minced
2 cups of potatoes, diced (pre-cook in microwave to soften about 5-6 minutes)
3 cups of chicken stock
1 cup of seafood stock
1 cup of 2% milk
1/2 cup of sherry
1/2 tsp. of hot sauce
1 tsp. of fresh thyme
Kosher salt and fresh ground pepper to taste
8 ounces of cooked chopped pancetta
Directions
- Follow directions on package to thaw lobster meat.
- Melt butter in large stock pot. Add diced onions, carrots, celery and garlic. Saute for about 4 minutes until soft. Add flour and stir to combine. Reduce heat and cook for an additional 5 minutes. Be careful not to let it darken.
- Whisk in chicken stock and seafood stock until blended.
- Add milk, sherry and hot sauce, mixing well.
- Add lobster, softened potatoes, thyme and salt and pepper.
- Allow to simmer for about 10 minutes to blend all the flavors.
- Top individual servings with crispy pancetta.
Tips and Serving Suggestions
- 1. For thicker chowder, simmer the soup longer. For thinner chowder, stir in additional chicken broth.
- 2. Serve with toasted bread and a cold beer!!
