Sunday football is the the perfect day for cooking and sharing ribs with friends and family!  Low and slow is the secret to cooking “fall off the bone” tender ribs, which we think is best achieved by cooking them in the oven.

Ingredients

  • 1/4 cup of ancho chile powder

  • 1/2 cup of brown sugar

  • 1/4 cup of salt

  • 2 Tbsp. of fresh ground pepper

  • 3 Tbsp. of smoked paprika

  • 1 Tbsp. of ground cumin

  • 1 Tbsp. of garlic powder

  • 1 Tbsp. of onion powder

  • 1 tsp. of dry mustard

  • 1 tsp. of ground cayenne pepper

  • 2 cups of BBQ sauce (we used Trader Joes Sriracha and Roasted Garlic BBQ Sauce)

  • 2 racks of baby back ribs

Directions

  • Preheat oven to 250 degrees.
  • Mix ancho chile pepper, brown sugar, smoked paprika, salt, pepper, cumin, garlic powder, onion powder, dry mustard and cayenne pepper in a small bowl until combined.
  • Peel off tough membrane that covers the underside/boney side of the rack. Generously apply dry rub to all sides of rack.
  • Place ribs meat-side down on foil-covered sheet pan.  Fold foil around the ribs to create a tight seal. Bake for 2 hours. Remove and cool for 15 minutes.
  • Open foil and carefully drain any accumulated juices.  Brush BBQ sauce on both sides of the rack.
  • Place rack meat side up and return to oven, leaving foil open.  Bake for 10 minutes, remove from oven, and brush another layer of sauce on meat-side only.  Repeat baking and brushing with sauce three more times, for a total of 40 minutes or until a knife slides easily into the thickest part of the rib.
  • Cut rack into rib pieces and serve with more sauce if needed.

Tips and Serving Suggestions

  • 1. Ribs can be completely pre-made two days ahead and reheated on a low temperature grill or oven for approximately 30 minutes. Add more sauce if needed.
  • 2. Serve with cold beer!!
