Apple and Dried Cherry Fall Salad with Thyme Vinaigrette

minutesSo we noticed Trader Joe’s created another goat cheese log with apricots, cherries and cranberries which inspired our fall salad recipe! Of course, if you can’t purchase the Trader Joe’s flavored goat cheese, plain goat cheese will be just fine!
Ingredients
5 cups of chopped kale* plus 2 cups of chopped romaine
2 apples, diced (we used cortland apples)
1 cup of dried cherries
1 1/2 cup of matchstick carrots
1 cup of toasted walnuts**
8 ounces of crumbled goat cheese (we used Trader Joe’s Apricot Cherry Cranberry Goat Cheese Log)
- For the dressing:
1/3 cup of champagne vinegar (we used Trader Joe’s Orange Muscat Champagne Vinegar)
2 tsp. of dijon mustard
1 tsp. of honey
1 Tbsp. of fresh thyme
1/4 tsp. of kosher salt
1/4 tsp. of fresh ground pepper
1/2 cup of olive oil
Directions
- Add greens to bottom of round serving platter and then layer remaining ingredients on top of greens in a circular pattern.
- Combine the dressing ingredients in a small jar. Close the lid tightly and shake well to combine.
- Drizzle salad lightly with dressing. (Serve remaining dressing on the side).

- 1. * Kale has a plethora of nutrients. It contains antioxidants, Vitamin C, Vitamin K, and beta-carotene which helps with cell-replacement.
- 2. ** By toasting the walnuts you can enhance the flavor of the walnuts. Simply toss walnuts in olive oil and salt. In a medium skillet, heat walnuts until browned, about 2-5 minutes.
- 3. Apples are a good source of fiber, antioxidants and polyphenols. Studies found that apples help lower cholesterol and blood pressure. Just keep the skins on!
