Olive Oil Smashed Garlic Potatoes

This recipe is not only healthier than traditional mashed potatoes, but it is easier! The more lumps the better!

Ingredients

  • 2 lbs. of small Yukon Gold potatoes *

  • 2 cloves of fresh garlic, minced

  • 3/4 cup of extra-virgin olive oil

  • 1 Tbsp. of kosher salt

  • 1/2 Tbsp. of fresh ground pepper

  • Fresh rosemary (optional)

Directions

  • Wash and cut potatoes in half (leave skin on). Place potatoes in large saucepan, cover with salted cold water and bring to a boil. Cook until tender, about 15 minutes. Drain potatoes and return to saucepan. Smash the potatoes with a fork or potato masher.
  • Add minced garlic and olive oil (1/4 cup at a time). Fold into potatoes.  Season with pepper and extra salt if needed.
  • Garnish with rosemary.

Tips, Nutritional Value, and Serving Suggestions 

  • 1.  * Small red skin potatoes can also be used.
  • 2. These potatoes would be excellent with our Simple Pan Seared Ribeye recipe.
  • 3. Extra-virgin olive oil is a main staple in the Mediterranean diet which has been proven to be a heart-healthy eating plan. Extra-virgin olive oil contains nutrients and antioxidants that help fight inflammation (healthline and Joy Bauer).
