Healthy french fries with a healthy chipotle greek yogurt dipping sauce!!!

Ingredients

  • 1 lb. of sweet potatoes, peeled (optional)

  • 2 Tbsp. of olive oil*

  • 1/2 tsp. of garlic powder

  • 1/2 tsp. of smoked paprika

  • 1 Tbsp. of chopped fresh rosemary

  • Kosher salt and fresh ground pepper

  • Chipotle Greek Yogurt Sauce
  • 8 oz. of plain greek yogurt

  • 1/2 tsp. of pureed chipotle pepper in adobo sauce
    (depending on desired heat level)**

Directions

  • Preheat oven to 425 degrees
  • Slice sweet potatoes into long strips about 1/4 inch wide, trying to maintain a uniform size for even cooking.
  • Spread potatoes on a slightly greased baking sheet. Drizzle with oil and sprinkle with garlic powder, smoked paprika and rosemary. Toss the potatoes to evenly coat with oil and spices.
  • Spread fries out on the sheet so they don’t touch or overlap. This will also help them cook evenly and get crispy.
  • Bake for approximately 30 minutes, flipping the fries after 15 minutes. Sprinkle with salt and pepper.
  • Chipotle Greek Yogurt Sauce
  • Combine plain greek yogurt and pureed chipotle pepper.
