Rosemary Sweet Potatoes Fries

Ingredients
1 lb. of sweet potatoes, peeled (optional)
2 Tbsp. of olive oil*
1/2 tsp. of garlic powder
1/2 tsp. of smoked paprika
1 Tbsp. of chopped fresh rosemary
Kosher salt and fresh ground pepper
- Chipotle Greek Yogurt Sauce
8 oz. of plain greek yogurt
1/2 tsp. of pureed chipotle pepper in adobo sauce
(depending on desired heat level)**
Directions
- Preheat oven to 425 degrees
- Slice sweet potatoes into long strips about 1/4 inch wide, trying to maintain a uniform size for even cooking.
- Spread potatoes on a slightly greased baking sheet. Drizzle with oil and sprinkle with garlic powder, smoked paprika and rosemary. Toss the potatoes to evenly coat with oil and spices.
- Spread fries out on the sheet so they don’t touch or overlap. This will also help them cook evenly and get crispy.
- Bake for approximately 30 minutes, flipping the fries after 15 minutes. Sprinkle with salt and pepper.

- Combine plain greek yogurt and pureed chipotle pepper.
