Garlic Roasted Potatoes

Ingredients
1 1/2 lbs. of red baby potatoes, rinsed and drained
4 Tbsp. of olive oil
4 cloves of fresh minced garlic
2 Tbsp. of grated parmesan cheese
1/2 tsp. of kosher salt
Fresh ground pepper
2 Tbsp. of finely chopped fresh parsley, chives or thyme
Directions
- Preheat oven to 400 degrees
- Lightly oil a baking sheet with nonstick spray.
- Cut potatoes in half and place onto baking sheet. Add olive oil, garlic, parmesan cheese, salt and pepper on top of potatoes and gently toss to combine.
- Bake in oven for 30-40 minutes or until golden brown, tossing occasionally. Garnish with fresh herbs.

- If potatoes seem dry just drizzle with more olive oil.
