Pork Tenderloin with Strawberry-Jalapeño Sauce and Sun-Dried Tomatoes

Sweet and Spicy! Pork Tenderloin is another meat choice that cooks quickly and is very tender. The fresh strawberries make this a summer favorite!

Ingredients

  • one 1 lb. port tenderloin, trimmed

  • 1 tsp. of kosher salt

  • 3/4 tsp. of black pepper

  • 2 Tbsp. of olive oil (divided)

  • For the sauce
  • 1 chopped Jalapeño (remove seeds to reduce amount of heat)

  • 1 Tbsp. of minced garlic

  • 1/2 cup balsamic vinegar

  • 1/4 cup of orange juice

  • 3 Tbsp. of strawberry preserves

  • 2 Tbsp. of sun-dried tomatoes (julienne style in oil)

  • 1 cup of fresh sliced strawberries

  • 1 Tbsp. of fresh thyme

Directions

  • Preheat oven broiler
  • Rub pork tenderloin with 1 Tbsp of olive oil, and salt and pepper. Place on rimmed baking sheet lined with foil. Cook approximately 15-20 minutes, turning frequently while cooking. Meat thermometer should read 145 degrees.
  • Cover meat with foil and let it rest while you make the sauce.
  • In a medium size saucepan, heat the other 1 Tbsp. of olive oil and cook the chopped jalapeño until soft (3-4 minutes). Next, add minced garlic, sun-dried tomatoes, balsamic vinegar and orange juice. Bring to a slight boil and add strawberry preserves.
  • Reduce heat to a simmer, stirring occasionally until sauce thickens about 10-12 minutes. Remove from heat then add fresh strawberries and thyme.
  • Slice pork into 1/2 inch pieces. Serve with the strawberry sauce.

Tips, Serving Suggestions and Nutritional Value

  • 1. If sauce reduces quickly, add some chicken broth to increase amount.
  • 2. Pork tenderloin can also be cooked on the grill. Timing and internal temperature would be similar to the oven technique.
  • 3. This pork would pair nicely with oven roasted potatoes and fresh green beans.
