Nothing says summertime like fresh local corn on the cob! There are so many methods to cook the corn and after trying almost all of them we thought this one worked the best. By pre-blanching in boiling water the corn is almost cooked and just has to be placed on the grill for a few minutes to get those nice charred marks. This allows grill space for other food and also reduces chances of overcooking the corn.

Ingredients

  • 6 ears of corn

  • 1/4 cup of extra virgin olive oil or melted butter

  • 1/2 cup of grated parmesan cheese

  • 1/4 cup of finely chopped fresh basil (optional)

  • Kosher salt and a pinch of Old Bay Seasoning (optional)

Directions

  • Shuck the corn. Place steamer-basket in a large pot. Add enough water to slightly cover the basket. Bring water to a boil. Add the corn and cook for 5-7 minutes. (This can be done in advance)
  • Place the corn on the hot grill, turning it around until all sides are charred, about 5 minutes.
  • Take the corn off the grill and brush with olive oil or melted butter. Sprinkle with salt, optional Old Bay, cheese and basil.
