This delicious eye catching recipe combines two fresh summer vegetables.

Ingredients

  • 2 lbs. of fresh asparagus

  • 1 1/2 cups of tri-colored cherry tomatoes

  • 2 tsp. of olive oil

  • 2 cloves of minced garlic

  • 1/2 cup of Parmesan cheese (divided into two 1/4 cups)

  • 1/2 tsp.of kosher salt

  • Freshly ground pepper

Directions

  • Preheat oven to 400 degrees.
  • Snap the tough ends off of the asparagus and slice tomatoes in half.
  • Toss vegetables in olive oil and minced garlic and place asparagus on roasting sheet with tomatoes on top. Add salt and pepper.
  • Sprinkle with 1/4 cup of parmesan cheese.
  • Roast for 15 minutes and sprinkle with remaining parmesan cheese.
