Grilled Salmon Kebabs

Ingredients
 1 ½ – 2 lbs. skinless salmon fillet, cut into 1-inch pieces
2 Tbsp. of fresh chopped oregano
1 tsp. of kosher salt
 ½ tsp. fresh ground pepper
1 tsp. of blackened old bay seasoning
2 Tbsp. avocado oil (tolerates high heat best)
3 lemons, very thinly cut into whole round slices (keep one whole to use as juice)
16 bamboo skewers soaked in water for 1 hour prior to using
Directions
- Prepare grill for medium heat. (Spray non-stick oil on grates)
- In a small bowl, combine oregano, salt, pepper and oil.
- Take 2 skewers and place parallel to each other, thread the salmon and folded lemon slices onto the parallel skewers to make a total of 8 kebabs. (Double skewering the salmon helps to flip the skewers while grilling)
- Brush with oil mixture and season with old bay.
- Grill, turning occasionally, 10-15 minutes.
- Squeeze fresh lemon on top of the grilled skewered salmon
